This Hearty Cabbage Skillet with Sausage, Bacon, and Creamy Egg Sauce is a rich, savory, and satisfying one-pan meal—perfect for a comforting dinner or a hearty brunch. The combination of crispy bacon, flavorful sausage, tender cabbage, and a luscious egg-based sauce makes this dish irresistible!

Ingredients: (Serves 4)

Main Skillet:

  • 4 slices bacon, chopped
  • 12 oz smoked sausage (kielbasa, Andouille, or your favorite), sliced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • ½ small green cabbage, shredded (about 4 cups)
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional, for heat)
  • Salt & black pepper to taste

Creamy Egg Sauce:

  • 4 large eggs
  • ¼ cup heavy cream (or half-and-half)
  • ½ cup shredded cheddar cheese (or Parmesan)
  • 1 tbsp Dijon mustard (optional)
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Cook the Bacon & Sausage:
  • In a large skillet (cast iron works great), cook the chopped bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
  • In the same skillet, brown the sliced sausage until golden (about 5 minutes). Remove and set aside with the bacon.
  1. Sauté Aromatics & Cabbage:
  • In the remaining bacon fat (drain excess if needed), sauté the onion until soft (3-4 minutes).
  • Add garlic, smoked paprika, thyme, red pepper flakes, salt, and pepper. Stir for 30 seconds until fragrant.
  • Add shredded cabbage and cook, stirring occasionally, until wilted and slightly caramelized (8-10 minutes).
  1. Make the Creamy Egg Sauce:
  • In a bowl, whisk eggs, cream, cheese, Dijon mustard, salt, and pepper.
  • Push the cabbage mixture to the sides of the skillet, creating a well in the center.
  • Pour the egg mixture into the center and let it set slightly (about 1 minute).
  • Gently stir everything together, allowing the eggs to cook softly but remain creamy (2-3 minutes).
  1. Combine & Serve:
  • Return the cooked bacon and sausage to the skillet, mixing gently.
  • Garnish with fresh parsley and extra cheese if desired.

Serving Suggestions:

  • Enjoy as-is for a low-carb meal, or serve over mashed potatoes or crusty bread.
  • Great with a side of sour cream or hot sauce for extra richness and spice.

This dish is packed with protein, flavor, and comfort—ideal for chilly nights or a filling weekend breakfast! Let me know if you’d like any tweaks. 😊🍳
