Grandma’s Potato & Mince Meat Bake

Serves: 2-3

Ingredients:

  • 7 oz (200g) ground beef
  • 2 medium potatoes, thinly sliced (or pre-boiled for faster cooking)
  • 1 tsp sweet paprika powder
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • 1 fresh red bell pepper, diced
  • 3 slices Cheddar cheese
  • 7 oz (200g) Parmesan cheese, grated
  • ¼ cup (60ml) Greek yogurt (or sour cream)
  • A handful of gherkins (pickles), sliced
  • Fresh dill, chopped
  • Oil for frying

Instructions:

  1. Cook the beef:
  • Heat oil in a pan and brown the ground beef. Season with paprika, garlic powder, salt, and pepper. Drain excess fat.
  • Add diced red bell pepper and cook until softened. Set aside.
  1. Prepare the potatoes:
  • If using raw potatoes, fry the slices until golden on both sides (or parboil for 5 mins).
  • Layer half the potatoes in a baking dish.
  1. Assemble the layers:
  • Spread the beef & pepper mixture over the potatoes.
